Super bowl grub. Doesn’t get much better than that. I love any excuse to chow down on good-for-the-soul snacks, especially while kicking my feet up and enjoying some good ol’ American festivities. These are great for the occasion because you can pre-wrap the bites – and make the sauce ahead as well – and then just pop them in the oven when you’re ready to indulge. And, of course, because they are incredibly tasty. Win-win!
Bacon-Wrapped Potato Bites
- 1 lb baby red new potatoes (similar in size)
- 1 Tablespoon vegetable oil
- 1/2 teaspoon paprika
- salt and pepper
- 3/4 lb thick cut bacon
- optional: chopped cilantro
Preheat oven to 375.
Wash and dry potatoes. Slice in half, place in large bowl and toss with oil, paprika, salt and pepper. Cut bacon into fourths (into thirds if bacon is not thick style). Wrap bacon around each potato and secure with a toothpick. Place potato bites on foil-lined baking tray and bake for 20 minutes. Turn heat up to 400 degrees, and bake for 10-15 minutes longer, flipping halfway through. Bake until bacon is browned and crisped.
Top with chopped cilantro if desired, serve with sauce.
Southwestern Chipotle Sauce
- ½ cup sour cream
- ¼ cup mayo
- 4 chipotles, chopped fine (canned in adobe sauce)
- 1 Tablespoon chipotle sauce from canned chipotles
- ½ teaspoon cumin
- ½ teaspoon chili powder
- 1 small garlic clove, minced fine (or 1/4 teaspoon garlic powder)
- squeeze of fresh lime
- Kosher Salt
Combine all ingredients in small bowl and mix well. Season well with salt.
